Bold Steps Award July 2010 - Adam's Sustainable Table
Overview
Adam’s Sustainable Table is a casual and family friendly restaurant, serving an eclectic mix of culinary styles from Northwest Regional to home cooking and affordable comfort foods. Adam's has taken many bold steps, most notably their efforts to influence the food supply chain through their purchasing decisions. By choosing to buy the majority of their food from local growers and suppliers, Adam's helps to reduce the negative effects of factory farming, pesticide use, fish depletion and food transportation, while supporting sutainable, organic and local family farms.

Food Purchases and Other Green Initiatives
During the growing season, Adam’s purchases about 70 percent of their food within 100 miles and another 10 percent from within 300 miles. They buy 95 percent of their produce from organic suppliers and local farms, as well as organic spices, baking materials, and dried fruits and nuts. They buy only vegetarian fed meats that are processed with no hormones or antibiotics and raised Cage Free or Free Range. Most of their meat producers are small-scale family run operations within 100 miles. Beef comes from Oregon Natural Meats which uses spent grain from Ninkasi Brewery to finish them for market. All of their seafood purchases are on the “green list” from the Blue Ocean Institute and the Monterey Bay Seafood Guide.

Adam's has implemented a number of other sustainable initiatives, including alternative-fueled vehicles for their entire fleet, collecting waste fryer oil to be turned into biofuel, and capturing food scraps for use in compost at Skinner's Farm.
