Bold Steps Award, December 2010 - Café Yumm!
Overview
Café Yumm! is an Oregon-based chain of “fast-casual” restaurants serving simple, nutritious dishes based on rice and beans at affordable prices. Café Yumm! has taken extensive steps to green their buildings and their operations, demonstrating that saving energy and resources are part of a successful business model. The chain pioneered the use of dual flush toilet handles in restaurants in Oregon and has installed high efficiency LED lights. The cafés use renewable and recycled building materials and use returnable rather than throw-away containers for catering and where available, participate in compost programs that turn food waste into fertilizer for vegetables.
Natural and Organic
Natural and organic ingredients comprise over fifty percent of their menu items. Starting next year, Café Yumm! will serve Oregon-grown black beans in its rice and bean bowls. Buying directly from an organic, Oregon farmer will not only expand the Café’s offering of local organic food, it will also help to build relationships between growers and buyers, support family farms and enhance Oregon’s capacity to grow traditional crops.
A Growing Company
Inc. Magazine named Café Yumm! the fastest growing food and beverage company in Oregon and number 27 in the nation. The company also made number 17 on Portland Business Journals’ Top 100 List of Privately Owned Oregon Businesses. Sustainability is integrated at every level of the organization. The company mission statement, posted in all the cafes, expressly adopts the Triple Bottom Line. The organization provides a generous benefit package for employees, including healthcare insurance, paternity leave, and education assistance. Café Yumm! is certified through BRING Recycling as a RE:think Business, a special designation for businesses that conserve resources and reduce waste in their operations.
